What kind of Thanksgiving planner are you? Do you wait until the last minute and go with the flow, or do you have a detailed spreadsheet like me that includes every detail of the whole dang meal? I’m too Type A to go without planning every piece of the meal out (including what burner or oven space we have left), but in case you are still thinking about your vegan Thanksgiving desserts, I’ve rounded them all up in one place! These range from slightly more effort to super easy (those boozy truffles will be the best decision you’ve made for the meal) and go from chocolate filled to everything pumpkin. I hope these help make your Thanksgiving planning a little easier as we come up into the week ahead. Almost all of these can be made at least a couple days ahead, so do yourself a favor and do some prepping before the big eating day sneaks up on you. Happy dessert planning!
Dark Chocolate Red Wine Truffles– Remember those truffles I mentioned? These are it! Boozy, easy, and chocolate, who wouldn’t want these at the table? I think these are one of my favorite desserts on the blog, but they would be great as a perfect little after dinner bite if no one has room for pie.
Mint Chocolate Chip Cake– I made this as our birthday cake over the summer, but I think it would make a perfect vegan Thanksgiving dessert if you want to go the cake route. Prep the cake layers a few days before and have the icing ready, assemble the day before, and you are good to go! Who wouldn’t want a pretty layer cake at their table?
Vegan Peanut Butter Pie– Here we are, pie! This pie was what I made for Thanksgiving last year. It’s actually really easy, can be fairly quick and needs chill time, so it can be prepped a day or two before. I’m making this one again this year for when my parents come to visit for the holiday and I can’t WAIT to eat it again.
Easy One Bowl Pumpkin Cake– Since making dinner for everything else on Thanksgiving seems complicated, why not make dessert easy! This one bowl, easy vegan pumpkin cake is a super fast way to get dessert done, with none of the stress. Serve with coconut whipped cream (spiked with cinnamon and vanilla!) or ice cream. Pumpkin is always a winner!
Vegan French Silk Pie- This one is an oldie but a goodie! It’s my take on a vegan french silk pie, but with a salty pretzel crust. I think this would bring the perfect amount of sweet/salty to your dinner table, without all the work of a cream pie. Tofu is the secret ingredient for the filling here, which sounds weird but it totally works!
Vegan Pumpkin Cheesecake Bars- What would a Thanksgiving dessert roundup be without cheesecake? If you want to stray from the usual pies, I think cheesecake is a great way to go. This vegan cheesecake is filled with pumpkin and has a shortbread crust that I basically want to pair with everything. These pumpkin cheesecake bars and baked and chilled, so this is another great make-ahead option!
Peanut Butter Chocolate Pie with Rice Krispies Crust– Why yes, I do think that you need a pie with a rice krispies crust at your Thanksgiving meal! This is one of my favorite pies, simply because it combines peanut butter and chocolate, plus has a super fun crust that is a departure from the norm. I can’t think of anyone that would turn a slice of this down! Plus, it’s a riff on a pie from one of my favorite places in NYC, Butter and Scotch.
Chocolate Bourbon Cheesecake Bars- If you want to go for the boozy dessert option this Thanksgiving, this is your dessert! Chocolate bourbon cheesecake bars are perfectly share-able and bring a little bit of everything great about dessert. This one also uses my favorite shortbread crust, with a vegan cheesecake filling that uses cashews and vegan yogurt to make for that perfect texture. Cheers to boozy sweets!
Dark Chocolate Pumpkin Gingersnaps-If you really don’t want to go either the pie or cake route (or want MORE desserts), cookies are where it’s at! These combine a little bit of everything fall, with ginger, dark chocolate, and of course, pumpkin. The dough for these could be made a week in advance and baked up on the day of. These would go perfectly with vanilla ice cream or send home with guests for a late night sweet treat. Also, these pair well with red wine, just for reference.
Best Vegan Pie Crust- Ok this one technically isn’t a dessert, but if you are making pies for your vegan Thanksgiving, you are going to need a good pie crust! This coconut oil pie crust is the easiest I’ve found and yields great results every time. I usually make my pie crust up to a week in advance, up to the point of freezing the formed crust and then blind bake and fill a day or two before. I like to get pies done at least a day in advance, to avoid the day of stress.

All of these look sooooo good! My family is the ultimate procrastinating family of the universe…we wait until like 36 hours before Thanksgiving, and THEN plan everything to a T, lol. Definitely need these desserts all up in my holiday feast!
