Helllooooo summertime cocktails! As the end of the month starts closing in around us (nooo!), I’m tempted to squeeze in every single summery drink and food I can think of. To start off, I bought a huge bag of sweet corn on the cob at the farmer’s market last week (if you are in Milwaukee, go here on Saturday and look for him, it’s his birthday this weekend!) and am muddling up all the mint that has taken over my poorly neglected garden. Even though my parsley leaves a lot to be desired and my basil has been killed by the heat, my mint is still thriving and surviving! Last year I used it up in boozy wine slushie drinks , non-boozy cherry lemonade , and even the prettiest fig laden sparkling water I’ve ever seen. To counteract all the non-boozy ways I’ve dug into my mint supply, this year we are going full boozy with a green tea mint cooler!
I’m somewhat impatient when it comes to cocktails, so I made this a quick and easy whip together kind of deal. If you have friends on your porch and need a cool/not hard to make drink to serve them, this green tea mint cooler is for you. I always happen to have all of these ingredients on hand and of course, need to use up my mint like whoa before the cooler temps start to hit.

Description
A boozy green tea mint cooler that is perfect for capping off the end of summer blues!
Ingredients
- 1 cup water
- 2 green tea bags
- 1/4 cup fresh mint
- 1 tablespoon cane sugar
- 3 ounces vodka
- 1 can or bottle of your favorite ginger beer
Instructions
- In a microwave safe bowl, place the 1 cup water and 2 tea bags in the bowl. Heat for 2 minutes, then set aside to cool for at least 5 minutes.
- To make the cocktails: In 2 highball/cocktail classes, muddle together the mint and sugar. Add a few ice cubes. Divide the vodka evenly between the two glasses, then divide the cooled green tea between the glasses and stir to make sure everything is combined. Top with your favorite ginger beer until glasses are full. Serve immediately.
