Hello from the start of fall! Ok it feels like fall one day and then summer the next, but really, it’s more like fall these days. I hadn’t planned on taking two weeks off from the blog, but life happened and work happened and then all of a sudden, I realized I just needed a few days to not do a dang thing, so a few posts got pushed to the side. Regardless, I wanted to still share this ‘feels like summertime’ lemon lime granita treat before the weather got too chilly. Granita sounds like a fancy dessert that takes quite a bit of effort, but it’s really the opposite. It’s more of a mix, dump and freeze kind of dessert, which turns into a boozy slushie treat that’s perfect for sipping on during those last warm days of summer.
I used to work at a winery (many moons ago) and one of our most popular drinks was a homemade wine slushie that was perfect for a Sunday afternoon treat or that last drink after a dinner out. This lemon lime granita is kind of like a hard liquor version of that slushie, with less work and all the benefits. Not into rum? Feel free to replace it with a sweet white wine or rose, they would pair perfectly as well!

Boozy Lemon Lime Granita

Description
A boozy and sweet lemon lime granita, spiked with rum and loaded with tart lemon and just a bit of sweetness, perfect for a summertime treat!
Ingredients
- 2 cups water
- 3/4 cup granulated sugar
- Pinch of salt
- 2 teaspoons lemon zest
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 2 tablespoons rum
Instructions
- In a saucepan over medium heat, whisk together the water, sugar, and salt. Allow to simmer for 3-4 minutes, until sugar has dissolved.
- Remove saucepan from heat and stir in the lemon zest, lemon juice, lime juice, and rum. Pour the mixture in a shallow dish and place in the freezer.
- Freeze for an hour. Scrape up the mixture and place back into the freezer for another 4-6 hours, until frozen. Break up the mixture in a slushie like consistency and serve immediately.
