Boozy Lemon Lime Granita

Description

A boozy and sweet lemon lime granita, spiked with rum and loaded with tart lemon and just a bit of sweetness, perfect for a summertime treat! 


Ingredients

  • 2 cups water
  • 3/4 cup granulated sugar
  • Pinch of salt
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup lime juice
  • 2 tablespoons rum

Instructions

  1. In a saucepan over medium heat, whisk together the water, sugar, and salt. Allow to simmer for 3-4 minutes, until sugar has dissolved. 
  2. Remove saucepan from heat and stir in the lemon zest, lemon juice, lime juice, and rum. Pour the mixture in a shallow dish and place in the freezer. 
  3. Freeze for an hour. Scrape up the mixture and place back into the freezer for another 4-6 hours, until frozen. Break up the mixture in a slushie like consistency and serve immediately.
