I know with all the holidays and traveling coming up, sometimes you get stuck in a airport/bus station/train station and are caught in a battle. Do you buy that nasty $10 sandwich? Do you eat that big bag of kind of lame fries and feel gross for the rest of the trip? If only you had brought your own snacks! I learned the hard way that bringing your own snacks is the only way to go when traveling. I mean, I will splurge on an airport burrito or bag of chips sometimes, but usually I like to see how long I can go without buying the overpriced, sometimes sketchy food at the airport. All of these same travel snack rules apply when you are on car trips too, naturally. I like to know when I’m going to eat and if I’m don’t know that, that I have a good arsenal of snacks in my bag so I won’t go from happy to hangry in seconds flat. I usually use whatever I have om hand, but sweetening this batch of cookie dough bites with a combo of maple syrup and molasses ensures a sticky enough dough without needing refrigeration during your travels. Oats are like life sustaining flecks of glory and peanuts/peanut butter are just the workhorse of all travel snacks, am I right?
One time, when my fiance and I were taking a car trip I got hangry, like real hangry. I just needed a little something to tide me over. We were on our way to Iowa for a weekend trip and I knew we were going to be eating dinner at a restaurant that serves Chinese food pizza (Yum!), but it was just far enough away that I knew I was going to need a snack beforehand. You know when you are just so hungry at a restaurant that you can’t even think because the voice in your head is going ‘I’mhungryI’mhungryI’mhungry’? I knew that was going to be the situation I was going to be in. Luckily, I remembered I had packed a few cookies that were a lot like these cookie dough bites, except in more of a cookie/granola bar form. At the time, I made the mistake of making no bake cookies with chocolate in them (hello summer sun in a car+melting chocolate), but when I made this batch of cookie dough bites, I replaced the chocolate with cocoa powder to avoid a melty mess. Do yourself a favor and avoid hangry/hungry stressful travels with a handful of cookie dough bites, you will thank me later!

Peanut Butter Oatmeal Cookie Dough Bites

Description
Oatmeal and peanut butter come together to create a perfect vegan cookie dough snack!
Ingredients
- 2 cups rolled oats
- 3 tablespoons maple syrup
- 1 tablespoon molasses
- 1/2 cup peanuts
- 1/3 cup cocoa powder
- 2 tablespoons tahini
- 2 tablespoons peanut butter
- 1 teaspoon vanilla extract
Instructions
- Pulse all ingredients together in the bowl of a food processor util combined. If dough is too dry, add another tablespoon of maple syrup until it can easily stick together. After dough comes together, roll into balls about an inch around (using 1 tablespoon dough each) and place on a greased cookie sheet. Refrigerate until solid and store in a sealed container.

Ohhhh travel food is the worst! I always try to remember to pack snacks and then end up scrambling last minute and wind up eating some nasty airport salad or soup. Love the idea of getting ahead of the game by keeping these deeeelicious dough bites on hand. Like I want to take them everywhere with me!

They stay together pretty well! I actually kept mine in the fridge for a few days, so that helped solidify them as well!
