It’s my birthday week and I’ll eat ALL the chocolate and peanut butter that I want to! Ok, I actually haven’t had THAT many sweets yet this week (mostly a lot of fries), but don’t worry my birthday cake recipe is coming later this week and ohhhh is it GOOD. In the meantime, I am ALL about these no-bake vegan cereal bars right now because they come together in 15 minutes, don’t need ot turn on the oven (hello old house with no AC), and are SO EASY! One of the biggest obstacles I’ve found when making vegan snacks is conquering the perfect creamy, delicious vegan dip. Happy weekend! I’m popping in quickly today to share a winter citrus quinoa salad that has been a staple for me the past few weeks. In an effort to keep with my intentions for the year, I wanted to find a salad that is filling, easy to throw together and hearty enough that I won’t be hangrily tearing through the cupboards for a snack in an hour. Mixing in a handful of pre-cooked quinoa and drizzling over a creamy lemon tahini dressing that even a tahini hater like me can love all seem to do the trick. (more…)
