Let me tell you, I am a total WUSS when it comes to caffeine. I have my one cup of coffee in the morning before work (either a blend from my hometown coffee shop or whatever local place we have around) and that’s it. No second cup of coffee, no afternoon latte, none of that jazz. I was actually off of coffee for a while a few years ago (after I broke the pot part of our coffee maker, oops!), so the first time I had an iced coffee during that time period I sucked it down so fast that I was all of a sudden feeling like I could do ALL OF THE THINGS and then realized that my hands were shaking as I type/banged on my keyboard. My body wasn’t used to coffee and then was all WHAT when I finally drank some again. So, needless to say, I’m a little sensitive to caffeine, but I do love a good coffee drink, especially in the summer! Cue, the creamy vegan nutella latte.
I sometimes have this problem with warm coffee drinks that when they get cold, they never really taste the same after you heat them up again. Because of this, I usually prefer iced specialty drinks, when they get cold, it’s fine because, duh, they are already cold. Maybe it gets a little watered down, but otherwise, I can sip it as slowly as I want and not worry about riding that caffeinated roller coaster of feelings. That being said, this is not a legit latte, because it uses coffee instead of espresso as the caffeine part of the drink. Really it’s like an iced coffee with nutella and cacao nibs blended in, but I needed a better title, so (faux) latte it is! I wanted to make the flavor a little deeper than just the nutella + coffee+ coconut milk, so cacao nibs were the perfect addition to add a little chocolate flavor and even a bit of roast-y-ness (<– is that a real word? Let’s go with it) to the vegan nutella latte. If you want to use espresso instead of coffee, by all means, go for it! I just want to save the world from my fast-talking, thinking a million miles a minute self, so I went with coffee. Also, it’s completely worth the time to blend up a batch of homemade nutella for this latte! It’s raw, vegan and takes no time at all to blend everything together. Plus, the extra nutella can be used to do fun things like fill fried doughnuts and swirl into bourbon blondies. Extra nutella is never a problem, that’s my life motto.

Description
An iced creamy vegan nutella latte that can be served at brunch or as your next afternoon pick me up!
Ingredients
- 2 cups light coconut milk
- 3/4 cup brewed coffee (depends on your taste)
- 3 tablespoons homemade nutella (the store bought stuff isn’t vegan)
- 1 tablespoon cacao nibs
- 1 teaspoon vanilla extract
Instructions
- In a blender, blend all the ingredients together until frothy. Serve over ice and drink right away.

Girl, I am so with you on all of this! Super sensitive to caffeine (that mocha in Minneapolis really slayed me our last morning there, haha), and I prefer iced to hot for very similar reasons. And nutella lattes always win!!!! Woo hoooooo my Vitamix is supposed to arrive today so I might have to do this over the weekendddddddd 😉

That’s why I literally chug my coffee and tea 😛 I can only drink it if it’s burning hot! It can’t even be minimally hot, haha, my mom thinks I’m crazy!

Ohhhh girl, I’ll take your second/third cup, slash afternoon latte pick-me-up, lol! I used to be super sensitive to caffeine, too, and didn’t start drinking coffee regularly until my mid-twenties…now I can’t survive without at least 2 cups. So I say if you can, keep moderating! No reason to get yourself hooked, ha! Anyhoo, these vegan nutella lattes are driving me bonkers! I want!
