- For the simple syrup:
- 1 cup water
- 1 cup granulated sugar
- 1/4 cup fresh basil
- 1/2 cup fresh mint
- For the sparkler:
- 4–6 figs (tops cut of and sliced into quarters)
- Juice of 1 lemon
- 2–3 cups sparkling water
- Additional mint leaves (for garnish)
Instructions
- To make the simple syrup: In a small saucepan, heat the water and sugar over high heat. Stir until the sugar has dissolved and the mixture starts to boil. Reduce heat to medium and add the basil and mint leaves. Simmer for 15 minutes. Strain out the basil and mint and store the simple syrup in a jar in the fridge for up to 2 weeks.
- To make the sparkler: In a small bowl, muddle the figs and lemon juice until a thick paste has formed. Divide between 2 glasses and stir in 1 tablespoon of basil mint simple syrup per glass. Top with sparkling water and ice, stir before serving and garnish with extra mint leaves.
