Friends…I know.

I know it’s Friday. I know you’re thinking about the meals you will/won’t make this weekend. I know you’re thinking about the laundry that maybe..MAYBE will be cleaned and folded this weekend. I know about the toilets you don’t want to scrub. or bathtubs that need to be scoured on a Saturday afternoon.

I know you want to come home from work today, make the fastest happy hour snack (maybe it’s dinner? Sometimes popcorn for dinner happens.) possible and not think about these boringly necessary duties. Image

I also know that when the steps are pop, melt, shake, and eat..it is bound to be a win ( times 3 because maybe you make this 3 times in a week and eat it all, maybe?). I have to say I never seriously craved popcorn, until I tried this version. I used microwave popcorn to ensure this treat is ready even faster and played with the spices a little to give it a different flavor each time. This is completely customizable to what you have on hand, but really, you can’t go wrong with melted butter and pungent spices coating popcorn. This spiced popcorn is so easy  that it’s the perfect Friday evening unwind snack, without too much technique or thought, but yielding inhale worthy results that are perfect for forgetting thoughts about work computers, cleaning, and not having enough hours in the day. Mexican Popcorn

Serves 3-4 people..or 1

1 package microwave popcorn

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

kosher salt

juice from 1/2 lime & zest from 1 lime

Microwave popcorn according to instructions on package. Set aside while preparing rest of ingredients.

In a small saucepan melt  3 tablespoons butter over medium-high heat. Add the smoked paprika, oregano & cumin to the butter and let sit over heat for 1 minute. Stir in the juice of half a lime and quickly stir mixture.

Empty popcorn into a paper bag, pour butter and spices over top and shake until all pieces are coated.
