Peanut Butter and Strawberry Jam Breakfast Pie

  • Cookie crust and topping:
  • 1/3 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 flax egg (1 tablespoon flax egg+4 tablespoon water)
  • 1 cup all purpose flour
  • For the filling:
  • 3/4 cup jam (any variety)

Instructions

  1. Preheat the oven to 350 degrees F. Grease a pie pan and set aside.
  2. In a large bowl, beat together the peanut butter, granulated sugar, maple syrup, and vanilla extract until combined. Beat in the remaining ingredients. Spread half of the mixture onto the bottom of the pie pan, spreading evenly. Top with the jam filling and drop the remaining cookie mixture on top of the pie, distributing evenly.
  3. Bake for 30-40 minutes, until top is browned and filling is bubbling. Set aside to cool before serving.
