Guys. These long winter days have me feeling some type of way. It’s not that I don’t love February, but there’s something about constant darkness, frigid temps, and knee-deep snow that has me longing for a bright and spritzy Spring day! The daylight is starting to hang out a little longer and the anticipation of sunnier, warmer days is so real. As Spring begins to (ever so slowwwwly) creep in the cracks, I’m in the mood for something just as bright as the days ahead! Hence, this dreamy vegan orange cake was born! And, can I just say, I am HERE FOR IT.

The orange zest pairs seamlessly with Grapefruit Zevia Energy Drink to bake a deliciously sweet ‘n tart sponge. It’s a combination I’ve been wanting to try for a while and I can proudly say that I have thee best instincts because, holy cow, it’s amazing.

I have to admit, this vegan orange cake took a little trial and error to get to perfection, but it’s just the hard work I put in for y’all! And nobody’s perfect. Not even me. Shocking, I know! Anyways, it’s important to make sure the center of the cake is done and not still wet. A few ways to check this is to lightly push down on it. If the cake bounces back, it’s done. If it stays sunken in, it’s not quite ready. Another way to test if your cake is done is to stick a knife or toothpick in the center. If it comes out clean, you’re good to go! If not, it might need some more time in the oven. One last way to test it is to stick your finger in the middle (like I accidentally did) and make a giant hole to see if it’s solid or liquidy. But unless you want a giant hole in your cake, I would advise against that last one.

After it’s finished baking through, you’re going to want to let it cool completely before the pièce de résistance – the powdered sugar glaze! Believe me, I know better than anyone that the temptation to shove warm cake in your mouth is strong. But you can’t rush perfection, guys, you just can’t. Once the cake has cooled, drizzle a little (or a lot) of the pretty glaze on top to make your cake Insta-ready. We do it for the gram. And for our taste buds. For the cake:

  • 3/4 cup Grapefruit Zevia Energy Drink
  • 1/3 cup olive oil
  • 1 tablespoon vanilla extract
  • 1 cup granulated sugar or Stevia equivalent
  • 23 tablespoons orange zest 
  • 34 tablespoons orange juice
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the glaze:

  • 1 1/2 cups powdered sugar or Stevia equivalent
  • 12 tablespoons almond milk



  1. Preheat oven to 350ºF. Grease a rectangular 11×7 pan and set aside. 
  2. In a large bowl, whisk together the Zevia, olive oil, vanilla, sugar and orange zest/juice.
  3. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt. Transfer the flour mixture to the bowl with the almond milk mixture and whisk until batter is combined.
  4. Transfer batter to the greased cake pan and bake for 30-40 minutes, or until cake springs back when lightly touched.
  5. While cake is cooling, prepare the glaze. Whisk together the powdered sugar and almond milk in a small bowl. Pour over cooled cake and serve.
