Ingredients

  • 1 5.4 ounce can of coconut cream
  • ¾ cup spinach (packed)
  • 4 dates (pitted)
  • 3/4 cup almond milk
  • ½ teaspoon peppermint extract
  • ½ vanilla bean (seeds scraped)
  • 46 ice cubes

Instructions

  1. In a blender, combine all ingredients except the ice cubes. Blend until smooth. Add the ice cubes and blend again until cold and creamy. Serve immediately.
