Vegan Banana Bread

We’re getting back to basics with vegan banana bread! I wanted to start tackling some of the basic baked good and vegan dessert recipes this year, really making sure I have a solid foundation for some delicious desserts before tinkering with them (and almost always adding chocolate, DUH). First up, this EASY and delicious vegan banana bread recipe! I played around with this one for months, trying to get the texture just right and making sure it’s sweet enough to be a dessert, but not too sweet so you can still eat it for breakfast. I actually polled you all on Instagram and most of you said you eat your banana bread with butter vs. peanut butter (one person was appalled someone was putting peanut butter on their banana bread, ha! However you eat it, this is one perfectly basic and delicious banana bread recipe that I see myself adding alllll kinds of things to in the future!

So how do you make vegan cinnamon rolls? Really, there’s isn’t much to change (outside of using almond milk) and guess what? Yeast dough isn’t scary! I’ve said it before and I’ll say it again, baking with yeast doesn’t have to be hard. I think one of the biggest fears around using yeast in bread is that something will go wrong. It won’t rise, it will rise for too long, what if I kill the yeast, or what if the water is too hot?! (more…)

Hello hello! It feels like it’s been quite a while since I’ve gotten a fresh new post on the blog! I’ve been in this weird in-between mode of having a new job (I’m working for the BEST people), adjusting to working from home full-time, and finding a new routine. It sounds like it’s WAY easier to work from home all the time, right? Don’t get me wrong, it’s so nice and I love it. But, I’ve had to get into a routine (more…)

There’s just something about the changing of the seasons that makes me want to bake ALL the bread. A few of the tall trees outside our house are starting to change from green to yellow and, despite our 80-degree weather, it’s a reminder that fall really is coming soon. I’m always on this in between feeling of (more…)

Homemade Herb and Onion Bagels

Make brunch even better with a batch of homemade herb and onion bagels! Homemade vegan bagels are easy and perfectly fluffy.

Would you believe me if I told you I’ve never made homemade bagels before? While it’s bee on my ‘to bake’ list for forever, I just never got around to the process of making onion bagels until this past weekend. Between the kneading, rising, and boiling process, some people might think it takes too much time, but I find it downright meditative. Forcing myself to commit to one activity for an entire afternoon has proven to be an exercise in patience, especially since I know one wrong move or trying to juggle too many cooking projects at once could result in a batch of over proofed bagels.
