I’ve loved all kinds of nachos since I can remember. I distinctly remember some of the places with the best nachos on vacations, weekend dinners, and grabbing fast food lunches (Qdoba nachos take the cake for dairy nachos there). There is just something about digging into a big plate full of all my favorite foods, piled high into a mountain of crispy, crunchy, cheesy goodness. I mean, who doesn’t love a plate piled high with salty tortilla chips, cheese, salsa and, if you’re lucky, guac AND lots of salsa? Turns out that those big piles of dairy nachos don’t always love me back, but I never have to give up my nacho addiction, because I’ve found the perfect vegan nachos right here! (more…)

One of the biggest obstacles I’ve found when making vegan snacks is conquering the perfect creamy, delicious vegan dip. These bourbon roasted pecans are singlehandedly one of my favorite things I’ve made in..oh the last year? I helped Kate from Cookie and Kate test a few recipes from her cookbook (!!) and this pecan recipe one one of my favorites. Second Sunday post in a row, I’m on a roll! I’ve decided to start sharing more simple and savory recipes, partly because my body can’t keep eating desserts all the dang time (if only) and partly because, after putting out the reader survey, I’ve found that many of you want more simple, healthy recipes, which I totally understand. Let’s do savory today! Sweets are nice, but when you are trying to fit into a kind of form fitting wedding dress (one month to go!!), you have to go with the savory side of things. I tend to shy away from vegan ricotta since it never seems to quite get close enough to the real cheese flavor. (more…)
