Yep, you read that right. CHERRY vegan cinnamon rolls. As if vegan cinnamon rolls weren’t enough, I went and added my favorite summer fruit to the filling and rolled it all up into a sweet breakfast treat. YES PLEASE!
So how do you make vegan cinnamon rolls? Really, there’s isn’t much to change (outside of using almond milk) and guess what? Yeast dough isn’t scary! I’ve said it before and I’ll say it again, baking with yeast doesn’t have to be hard. I think one of the biggest fears around using yeast in bread is that something will go wrong. Vegan blondies have been on my ‘to-make’ list for years. I actually don’t eat them ALL the often, but it’s mainly because I just haven’t found a recipe that I REALLY love yet. Ok, let’s just TALK about how many tries these vegan peanut butter cookies took me. I’ve been looking for a recipe that is just straight up peanut butter cookies, no almond butter, no other stuff, and something that I can throw together in a SNAP when I get that hardcore cookie craving. I found the perfect cookie in these, with a perfectly crispy, chewy outside and a super soft, peanut butter-y inside that feeds that inner peanut butter lover in me.
I bet you thought I was allllll done with the lemon desserts, right? NOPE. Turns out, I keep buying lemons over and over again (but always forget to buy more sugar and olive oil, WHY?!) and they end up being the main thing I bake with each week. While I’m not complaining, you have to know that these are not only AMAZING lemon poppy seed cookies, but they are also the base for the absolute BEST vegan sugar cookies I’ve come across in years.
